sorry to tell you this donunus but probably 100% of the salmon served in Phils ( and many other countries in the world) is frozen..Actually, frozen salmon should be "fresher" than fresh salmon as the freezeing is done on the boat ,just after the fish is caught......Fresh caught, can sit for hours/days befor getting to market.
